Favorite Carrot Cake Recipe
This carrot cake recipe is full of healthy ingredients and tastes wonderful. It's moist and very flavorful - great with coffee for breakfast. I love it plain, but cream cheese frosting would make it divine.
- 2 c whole wheat flour
- 1 c packed brown sugar
- 2 t cinnamon
- ½ t nutmeg
- ½ t cloves
- 1 t salt
- 2 t baking soda -------------
- 2 t vanilla
- 1 c oil (canola or vegetable work well)
- 1 c honey
- 3 eggs (slightly beaten)
- 3 c finely grated carrots
- ¾ c crushed pineapple, mostly drained
- ¾ c shredded coconut
- ¾ c raisins
- ¾ c chopped walnuts
Mix the first seven dry ingredients, then stir in the rest. Pour batter into a 9"x13" pan and bake at 350ºF for about 50 minutes or until toothpick poked in the center comes out clean. Enjoy!
