Pumpkin Snack Bars Recipe

This recipe for Pumpkin Snack Bars is simple and really delicious. As with the Carrot Cake recipe, you could add cream cheese frosting, but it really doesn't need it.

  • 1 c flour
  • ¾ c sugar
  • 1 t baking powder
  • ¼ t salt
  • 1 t cinnamon
  • 1 c pumpkin
  • ½ c vegetable oil
  • 2 eggs

Stir together flour, sugar, baking powder, salt, and cinnamon in a large bowl. Stir in pumpkin, oil, and eggs. Pour into a greased 9" square cake pan and bake at 350ºF for about 20 minutes or until a toothpick poked in the center comes out clean.

A really simple icing for these is a couple of spoonfuls of french vanilla yogurt mixed into powdered sugar. It's a little like a thin cream cheese frosting.
